Kale Pesto

INGREDIENTS

2 cloves garlic

2 cups packed kale (about 1 small bunch)

1 cup basil

3/4 cups raw cashew

Salt and pepper to taste

1/4 cup or more of extra-virgin olive oil 

1/3 cup parmesan cheese, grated

METHOD

Mix all the ingredients together in a blender until it becomes a smooth paste,

Serve with Fidanzati or any of your favourite pasta.
