Tricolori Salad
Serves 1
INGREDIENTS
1/2 cup papaya, cubed
1/3 cup celery, sliced
1/3 cup canned butter beans, drained
1 tbsp red onion, sliced
1 tsp fresh tarragon
1 tsp fresh parsley
1/4 cup goat feta, cubed
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp toasted pumpkin seeds
METHOD
Mix all the ingredients except the pumpkin seeds together in a bowl.
Pour the salad onto a plate and sprinkle with toasted pumpkin seeds and enjoy.
