Summer Salad

Serves 2

INGREDIENTS

1 packet arugula salad

1 cup of your favourite summer fruits

1/2 cup feta 

1/2 cup walnuts, chopped

1/4 cup fresh mint leaves

Olive oil

Balsamic vinegar

METHOD

Rinse the arugula salad and pat dry.

Divide the salad into two portions, on two plates.

Roughly chop the larger fruit and divide all the fruit evenly onto each plate.

Crumble the feta on top and garnish with fresh mint leaves and chopped walnuts.

Drizzle each serving with olive oil and balsamic vinegar.

Bon appétit! Served on my “Piano” dinner plate.
